Story
It is not known why Armand left France, or anything about his journey, but Armand arrived in Sydney in 1898. He moved to Melbourne and the first knowledge we have on him was in Brisbane in 1900 where he worked for the Governor of Queensland Lord Lamaington as their head chef in 1900. It was here that Armand first made the cullinary delight the lamington.
In France he was friends with Victor Hugo and in Australia he was also chef to the Duke & Duchess of York (who later became the King & Queen of England) on their tour of Australia and New Zealand in 1901.
When Dame Nelly Melba was in Brisbane she referred to him as her little French Chef. When Edward the Prince of Wales, later became King of England, toured Australia in 1920 he chose Armand as his chef and presented him with a lapel pin of E for Edward with A Crown and Prince of Wales Feathers on top for his services. I believe that Armand was Australia’s first celebrity chef.
